| Further proof that Hong Kong has become a major dining destination came with the arrival of the Pierre, from renowned French chef Pierre Gagnaire. The iconic chef visits frequently to ensure his namesake restaurant adheres to his take on modern French cuisine. Appetizers and entrees often see the key ingredient served in different ways. Take the starter of French langoustine: It arrives as mousse, grilled on skewers, pan-fried, raw as tartare and in a veloute sauce. And that's just one course. Other dishes are less fussy but no less divine, such as the lamb with oregano and herb butter, while a few seem to come to the chef on a whim, which is surely the case with the popcorn soup. The wine is magnifique and not always French, with much available by the glass; an unusual Greek variety was recently suggested with the langoustine. The same level of attention has gone into the decor-all of it meticulously chosen by the chef, down to the rose-colored water in the vases. The result is an atmosphere that somehow manages to be both relaxed and a high-style, an aesthetic that matches what's on the plate. But like many places in Hong Kong, the scene-stealer is the view. This one comes from the top floor of the Mandarin Oriental, where the adjacent M Bar also buzzes every night. |
